summer egg breakfast
Ingredients:
2 eggs
1/2 tomato
1/4 avocado, sliced
1 tbs. olive oil
2 slices Rudies gluten free bread
salt and pepper to taste
1 peach
Directions:
1. Add olive oil to a pan. Once heated, cook two eggs with the lid on.
2. Slice the avocado and tomato.
3. Once the eggs are cooked, remove from heat, and slice in half so the eggs are separate.
4. Once the toast is ready, spread the avocado on each slice, then top with sliced tomato.
5. As a last step, put one egg on each piece of toast.
6. Top with salt and pepper.
7. Slice the peach in half and serve with breakfast.
