red velvet pancakes

Yield:16 small pancakes
Ingredients:
1 1/2 cup pancake mix ( I used King Arthur Flour gluten free pancake mix)
2 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
1 1/2 cups milk
2 large eggs
1 teaspoon vanilla extract
1 tablespoon red food coloring
2 tablespoons powdered sugar
Directions:
1. Heat a pan or pancake griddle over medium heat.
2. Mix all of the dry ingredients together in a large bowl. Mix the milk, eggs, vanilla, and food coloring in another bowl.
3. Whisk the milk mixture and dry ingredients together.
4. Pour the batter by 1/4 cup onto the pan and let it cook until bubbles form on top. After about 2-3 minutes, flip and cook cakes for another minute before removing from heat.
5. Top with powdered sugar and serve.
