quinoa kale sALAD
Total Time: 25 minutes
Yield: 1 2-cup serving
Ingredients:
1/4 cup quinoa
1/2 cup water
1 cup of kale, shredded
1 teaspoon extra virgin olive oil
3/4 teaspoon honey
1/2 teaspoon lemon pepper
1 tablespoon shredded coconut
Directions:
Bring 1/2 cup of water to a boil in a medium sized pot.
Add quinoa and simmer for 20 minutes.
Tear the kale into bite-sized pieces, excluding the rib.
Mix extra virgin olive oil, honey and lemon pepper to make the dressing.
In a serving bowl, mix together kale, quinoa and dressing. Top with shredded coconut.
