quick and simple egg breakfast
Ingredients:
olive oil
2 eggs
1 corn tortilla
handful of kale
salt and pepper to taste
lemon pepper to taste
Directions:
1. Fry two eggs, sunny side up with a lid on until the top becomes cooked.
2.Salt and pepper egg to taste.
3. In a second pan, fry kale in olive oil, then add tortilla to warm.
4.Season kale with lemon pepper.
5. Assemble all ingredients, starting with the tortilla, adding kale, then topping with egg.
