popeye egg scramble
Total Time: 35 minutes
Yield: 3 servings
Ingredients:
3 eggs
3 cups spinach
3 mushrooms, diced
1/4 cup onion, diced
1 tbs. olive oil
1 yellow bell pepper
Directions:
1. First, dice up the mushrooms, onion and bell pepper.
2. Next, add olive oil to a medium sized frying pan and fry up the diced vegetables.
3. In a small bowl, crack 3 eggs, then mix with a fork.
4. Next, add some olive oil to a frying pan, then add the eggs. As the eggs begin to cook, stir them to scramble the eggs.
5. In another frying pan add some olive oil, then 3 cups of spinach. Place a lid on top of the spinach to steam it.
6. As a final step, combine the cooked vegetables, egg, and spinach into a large saucepan and stir to mix all of the ingredients together.
