pineapple chicken stir-fry
Total Time: 20 minutes
Yield: 1.5 cups
Ingredients:
1/4 cup pineapple
1 chicken breast
1/4 cup snow peas
1/4 red bell pepper
1/2 cup chopped broccoli
1 tablespoon olive oil
1 teaspoon soy sauce
Directions:
1. 1st prep the vegetables by cutting the bell pepper, broccoli and snow peas. Add all of the prepped vegetables into a bowl and add the pineapple.
2. Before frying up the vegetables, cut the chicken into thin strips.
3. In a medium sized pan, heat olive oil and fry the chicken for about 8-10 minutes, until it is cooked.
4. Once the chicken is done cooking but not quite brown, add in the vegetables and pineapple and fry for another 5-7 minutes, stirring occasionally.
5. As the stir-fry is cooking, add in the soy sauce.
6. Finally, serve over rice or in a bowl.
