grilled stuffed bell peppers
Total Time: 35 minutes
Yield: 2 stuffed peppers
Ingredients:
1 medium sized bell pepper
1/4 cup cooked brown rice
1/4 cup canned black beans
1 teaspoon red pepper flakes
1 teaspoon lime juice
1/2 tomato, diced
1 teaspoon olive oil
Directions:
1. Cut the bell pepper in half and remove the seeds. Also cut off the stem.
2. Next cut the tomato in half and dice half of it. (The rice, beans, and tomato will be the filling for the bell pepper)
3. After heating up you BBQ, place the two halves of the bell pepper facing the grill and BBQ for 7-10 minutes, turning them halfway through.
3. In a medium sized pan, heat the cooked rice, beans, and tomatoes. To season the mix, add lime juice and red pepper flakes. Mix it all together.
4. Once hot, use a spoon and fill each bell pepper half with the rice and bean mixture.
