dried fruit bars

Yield: 10 bars
Ingredients:
1/2 cup flour
3 eggs
1/2 cup milk
1/4 cup raisins
1/4 cup dried apricots, chopped
1/4 cup dried pitted prunes, chopped
Directions:
1. Preheat oven to 325 F.
2. in a medium sized bowl, mix together flour, eggs and milk.
3. Using a sharp knife, chop the dried apricots and dried prunes on a cutting board into smaller pieces so they are roughly the same size as the raisins.
4. Next, add the dried fruit to the batter and stir all of the ingredients together.
5. Lightly spray an 8x8 glass pan with olive oil.
6. Once the pan is sprayed to prevent sticking, add in the batter.
7. Place the glass pan into the oven and bake for 30 minutes.
8. Allow the pan to cool, then cut the bars into 10 individual pieces.
