chilled avocado soup
Ingredients:
1/2 avocado
1/2 cup chicken broth
cayenne pepper to taste
Directions:
1. Cut the avocado in half and take out the pit.
2. Next, measure out 1/2 cup chicken broth.
3. Decide how much avocado you want to scoop out for the soup portion and add it straight into the chicken broth.
4. Whisk together the avocado and chicken broth to make it a soup consistency. If you have an emersion blender or a Vitamix you can use it to blend the soup.
5. If you use a whisk, strain the excess chunks of avocado with a strainer.
6. To add some flavor and color, add some cayenne pepper.
7. Finally, add the soup into the avocado and use it as a bowl.
8. This soup can be served either hot or warm.
