chicken, mango and avocado sandwich
Total Time: 20 minutes
Yield: 1 sandwich
Ingredients:
1 bread roll
1/4 avocado
1/4 mango
1 chicken breast
1 tsp. olive oil
2 bread and butter pickles
1/2 teaspoon Italian seasoning
Directions:
1. Butterfly wing the chicken breast by cutting the chicken almost in half. Then open it up and pound it to make the chicken thinner.
2. In a medium sized pan, heat the olive oil, then place chicken on the pan and season it with the Italian seasoning. Cook for 7-8 minutes on each side.
3. Next cut up the avocado and mango, then scoop out with a spoon.
4. Blot two pieces of pickles on a paper towel to remove excess juice.
5. Finally, assemble the sandwich by putting the cooked chicken, mango, avocado and pickles onto the bread.
