black bean and vegetable soup
Servings: 1, one cup
Total time: 30 minutes
Ingredients:
1/4 cup black beans
1/4 cup celery, chopped
1/4 cup carrots, chopped
1/4 cup onion, diced
1 cup chicken broth
Directions:
1. Dice all of the vegetables and mix them together into a bowl.
2. Rinse beans and add to the vegetables.
3. Bring chicken broth to a boil and add the veggies and black beans.
4. Simmer for 15-20 minutes.
5. Serve with toast and hummus.
